Happy international pancake day!
It’s my third time of celebrating pancake day and every time it makes me feel even more excited! Excited to test out new recipes and try different variations as well as see all these beautiful pancake photos on Instagram and get new inspirations!
In Poland, where I am originally from we don’t celebrate pancake day at all! However, a few days earlier we celebrate doughnut day called Fat Thursday which symbolises the end of carnival!
I love pancakes and crepes because it is such a versitile thing! No matter if you are gluten free or vegan, if you prefer sweet or savoury, there is always a choice for everyone!
And there is nothing better than slow mornings, amazing smell in the kitchen and homemade crepes!
I have a few favourites but recently I often go for chickpea crepes/pancakes that I serve with savoury toppings and often have for dinner or teff – banana ones with all the goodness on top like granola, cashew cream and nut butter.
Below I give you two of my favourite recipes, but please let them be your inspiration! Get creative, follow your taste and cravings and make your own variation! Play around with the ingredients, sizes and colours and let things flow!
Oh, and do not worry if you end up having pancakes for breakfast lunch and diner (haha), it is allowed! Because everyone loves pancakes, right? At least I do!
GET inspired and choose what you feel like!
- Chickpea flour (1/2 cup)
- Cooked and purred pumpkin (approximately 1/2 cup)
- Squeezed orange (less then a half)
- Some water (probably 1/4 of cup – if needed more add more)
- A bit of olive oil
- Some baking soda (1/2 tsp)
- Some arrowroot powder (1tbsp)
- Nigella seeds
- Pinch of salt
*You can add your favourite spices (for example herbs, smoked paprika or chilli powder)
*You can also use plant milk instead of water or skip outed pumpkin
*You can alway go for a basic recipe using chickpea flour, water or plant milk, some oil and pinch of salt!
Mix all dry ingredients in a bowl then add all wet ingredients and combine them together. If needed add some more water. Bear in mind that the texture shouldn’t be too thick and for crepes it should be even runnier. Heat a bit of oil of your choice (I often use a tissue to spread it evenly) and fry you pancakes/crepes on a medium heat pan. Wait until you see bubbles from one side and then flip them over and leave for another while.
Choose your favourite toppings and enjoy! This time I went for mashed avocado with some spices, tamarind and lime, golden sauerkraut from the SauerCrowd brand, alfalfa sprouts and
- Teff flour (1/3 cup)
- Plant milk (1/2 cup)
- 1 small banana
- Baking soda (1/2 tsp)
- Cacao (1tbsp)
- Carob (1tbsp)
- Maca powder (1tsp)
- Lucuma powder (1tsp)
- Chocolate extract (1/4 tsp)
- Coconut oil (1tsp)
- Squeezed orange juice
- Pinch of salt
*You can add your favourite spices like for example grounded cinnamon, cardamon, cloves or anise star.
*You can alway go for a basic recipe using teff flour, plant milk, banana, baking soda, some oil and a pinch of salt!
*If you really like sweet you can add sweetener of your choice.
Blend all the ingredients together in a hight speed or hand blender. The consistency shouldn’t be too thick and too runny so if needed ad some water or flour. If you decide that you go for pancakes the texture should be a bit thicker than crepes one. Heat a bit of coconut oil (I often use a tissue to spread it evenly) and fry you pancakes/crepes on a medium heat pan. Wait until you see bubbles from one side and then flip them over.
Top with your favourite toppings and enjoy! I usually go for homemade cashew cream, granola, nut butter, roasted nuts or seeds or some dried fruit! However, any jams, compotes or yoghurts sound also amazing!
