Asparagus and strawberries, have you ever tried this combination? To tell you the truth this is also my first time!
I love the taste of both of them but have never tried to combine them together! I came up with this very simple, fresh and seasonal salad spontaneously and it turned out to be so delicious! Especially basil and strawberries dressing makes the taste very special! You have to try it! It rocks!
As the season for both asparagus and strawberries is really short, definitely too short, I recommend to take advantage of it! Experiment and create delicious meals enjoying each bite! Not only it tastes amazing but also looks! It is perfect summer idea for either lunch, dinner or even breakfast! For those who are not vegan it can be perfect with poached egg or to put on top of your omelette! For vegans, cashew cheese fits perfectly!

- Olive Oil
- Mix of seeds
Preheat the oven to 200 Celsius degree, wash the asparagus, split the ends off and cut them into three. Massage with a bit of olive oil and salt. Place them on the baking tray or in the casserole dish and bake until they become nicely brown on to and soft but a bit crunchy (about 15-20min). Meanwhile, you can start preparing dressing. Place olive oil, fresh basil leaves, some squeezed lime juice, a pinch of salt and just a few strawberries in a blender and blend it together until smoothness. If you want it more liquidity add some water. Then cut the strawberries into quarters and check your asparagus 🙂 For the last few minutes place on the baking tray mix of seeds and roast them. You can also do it in the pan. Once you have this done, put 3 layers on the plate, rocket, asparagus and then strawberries. Pour the dressing on top of it and sprinkle with roasted seeds. You can add also a bit of salt on top and black pepper if you like.
