The avocado pesto is my every day must have! It is my addiction, I add it nearly to all my dishes! It is so cramy, tasteful, fresh and delicious! I am sure you will fall In love with It as I did!
This one is my favourite flavour variation I came with after many experiments. It goes with almost everything! You can make it more runny and use it a a pasta sauce or salad dressing or thicker and eat it with vegetables as a dip or add to your abundance bowls or between the burgers! To tell you the truth it enriches the taste of every meal so I put a spoon or two all my savoury meals!
I hope that I convinced you enough to try it! It is just blending a few ingredients, so no excuses, everyone can do it!
INGREDIENTS:
- Avocado
- Fresh Corriander
- Fresh Parsley
- Fresh Mint
- Spinach
- Olive Oil
- Lime/Lemon
- Salt & Nigella Seeds
- Water
METHOD:
Place the avocado, fresh herbs a bit of olive oil, lime juice, salt, nigella seeds and a bit of water in the blender and blend it into the smooth texture (you can also do it using hand blander but it is harder and takes longer). Add the handful of spinach and a bit of water and blend it once again. Try it and decide if any more salt or lime is needed. If you want it more runny add some water. You can also vary with this recipe to make the flavour more interesting by adding to the blender roasted black sesame seeds or sunflower seeds!
TO SERVE:
Serve your green pesto with whatever you want! You can mix it with rice, buckwheat, quinoa or other grains and have the super fresh flavour of them! You can use it also as a green pesto pasta sauce. It goes perfectly with every vegetables both roasted and raw. I love it as a dip for roasted sweet potato or celeriac fries. Moreover, it is a perfect dressing for salads for example roasted beetroot one as well as a component of your abundance bowls. Burgers tastes also perfect with this pesto!
You can keep it in the fridge for a few days, however once you make it you probably eat it in one or two days! It is so delicious and addictive, so be careful! However, such a healthy addiction is not so worrying!
