Simple Carrot & Parsnip Burgers

Super easy and super quick millet burgers with grated carrots and parsnips! I love this recipe because of its simplicity! This few basic ingredients appeared to be such a tasty and perfect combination! You spend half an hour in the kitchen and then you enjoy your burgers for the next couple of days! It is worth it!

This grated carrot and parsnip burgers have been recently my favourite! I always combine them with various dips, hummuses and roasted or raw vegetables. The best thing is that you can add whatever you want, mix your favourite ingredients and create your own flavour combination basing on this soft and at the same time crunchy patties.

They are perfect solution for everyone, both for people who are not so into cooking and people who just do not have time for it! They can secure your meal in easy way, being also nutritious!  They are so tasty even without any extras such as greens or dips! I sometimes grab a few of them and have my quick lunch secured!

Even if you are not vegetarian, try them and I am sure you will love them! They are so simple, easy to make but so delicious, and it is your decision what you put on top or between them! Check this recipe out!

INGREDIENTS:
  • Millet Groats
  • Carrots
  • Parsnips
  • Blended Oat Flakes (into flour)
  • Sunflower Seeds
  • Black Sesame Seeds (optionally)
  • Spices (wild garlic, smoked paprika and sweet paprika powder, optionally child powder)
  • Salt & Nigella Seeds
  • Rapeseed Oil
  • Tamari Sauce (soya is also okay if you you it normally)
METHOD:

First, cook the millet till its softness adding more water if needed. Meanwhile, peel the carrots and parsnips and grate them into the thinnest pieces. Once your millet has cooled down, preheat the oven to 220 Celsius degrees. Take a big bowl, place in it all of the ingredients: cooked millet, grated carrots and parsnip, sunflower seeds (roasted are even better), blended oat flakes, spices (as much as you wish), salt, nigella seeds and a bit of rapeseed oil and tamari sauce and mix everything finely by using your hand to get the consistent texture. Then start shaping your burgers, you can make the thinner or thicker, it depends on your preferences, put them on the baking paper on the baking tray and bake them for approximately 25-30 minutes. They should be a bit brown on top and you should feel an amazing smell in the kitchen! Do not worry if they stick to the baking paper, once they cool down, it is easy to  remove them form the tray. Place them into the container and store in a fridge for the next few days!

TO SERVE:

You can serve your burgers with almost everything! You can create a real burger using buns, sauces and vegetables or choose a bit healthier option and combine it with roasted eggplant, red pepper or sweet potato slices as well as wrap them with the lettuce. I always eat them either with hummus (pumpkin or beetroot) or avocado dip adding many vegetables and creating abundance bowls! Add what you like the most and enjoy it!
