After many warm and cozy meal propositions for a bit depressing winter weather it is finally time for something light and fresh! I have been really craving salad for a few weeks, however not green one. I really wanted to create something with unique and interesting flavour but also easy to prepare . Inspired by Sarah from My New Roots I decided to create my own version of red cabbage salad (the first in my life) and it wouldn’t have came off even better and tastier!
The combination of the ingredients is just perfect and thanks to mint and orange the salad is so fresh. I fell in love with it to such an extent that I have eaten it for the previous week nearly every day! It reminds me the taste of the spring that is hopefully coming soon.
The good thing is once you prepare it you can enjoy it for the couple of days because the portion from on cabbage is quite big! It is absolutely fine to keep it in the fridge! What is interesting the flavour is even much more improved and the salad is more tasteful! It is a perfect idea for lunch as well as dinner! So as you can see it has only advantages!
You definitely have to try this groundbreaking red cabbage salad! It is super easy and quick to prepare and the taste is amazing!
INGREDIENTS:
- Red Cabbage
- Carrot
- Blood Orange (normal one is also good)
- Parsley
- Mint
- Pumpkin Seeds
- Pistachios
- Black Sesame Seeds (optionally)
- Lime/Lemon
- Olive Oil
- Salt & Nigella Seeds
METHOD:
Chop the red cabbage finely and place it in a big bowl. Cut the carrots into thin slices, dice the orange and place it in the bowl with cabbage. Add chopped parsley and mint, roasted pumpkin and black sesame seeds and crumble the pistachios. Squeeze the lime, pour some olive oil and, both salt and nigella seeds and mix everything together. Leave it for an hour and let the salad improve its taste.
TO SERVE:
You can eat it by its own or serve it with black lentils, the combination is just amazing! Store your salad for a few days in the fridge and enjoy your next delicious meals!
