Life changing and time saving vegetable loaf!
Believe me or not but this quick and easy recipe might secure some people lives, of course when it comes to lack of time for cooking!
Once you do it you do not have to prepare your lunch, breakfast or dinner for a few days. But remember to combine every time different ingredients not to get bored easily.
There is nothing easier that blending your favourite vegetables with groats, lentils and some spices. You can do different flavour variations, depending on your taste preferences!
This loaf is a combination of my favourites for this autumn/winter season!
INGREDIENTS:
- millet groats
- red lentils
- pumpkin (optionally butternut squash)
- red pepper
- turmeric & smoked paprika powder
- salt & nigella seeds
- plant oil
METHOD:
Preheat the oven to 200 Celsius degree, halve red pepper and pumpkin, remove the seeds from inside, place them on the baking tray and bake until they become a bit brown on top. Meanwhile, cook the millet groats for approximately 15 minutes till the water evaporates and millet be soft. In the second pot place the previously rinsed red lentils and cook them along as they need to become creamy with consistent texture, mixing them and adding more water if needed. Once, everything is prepared leave it to cool for a few minutes, but do not turn off the oven. Then blend everything together in a bowl (cooked millet,lentils,roasted pepper and pumpkin) adding both turmeric and smoked paprika powder, salt and nigella seeds and a bit of oil. You can also add some herbs such as dried parsley, wild garlic or cilantro to make the taste more intense and interesting. Mix everything well, place the texture in the bread pan baking form and bake your super orange pumpkin loaf for about 40 minutes. Leave it to cool and let the loaf become condensed. Preferably put it in the fridge for the whole night or at least a few hours and then enjoy it!
TO SERVE:
Your loaf is ready! Make a delicious sandwich with the slice of it or eat as a side to your salad or roasted vegetables as I do. It is delicious combined with avocado pesto or olive tapenade and some greens of course!
