Sweet Potato, Quinoa & Kale Salad

This salad is definitely my favourite one!

I came up with this recipe accidentally a few months ago preparing lunch with my brother from a few ingredients we have only had at home.

And here it is the best salad in my life!

I really fell in love with it to such an extent that I even prepared it for Christmas dinner. It is absolutely perfect for every single day, both for lunch or diner. Prepare more and store it in the fridge. You can save your time next day and the cold one tastes even better.

Once you try it you do not want to it anything else for lunch, believe me!

Here is the recipe:

INGREDIENTS:
  • Sweet Potato
  • Chickpeas (previously cooked or from tin)
  • Quinoa
  • Kale
  • Lime
  • Olive Oil
  • Salt & Nigella Seeds
  • Black Sesame Seeds
  • Smoked Paprika & Turmeric powder
  • Roasted Sunflower Seeds (optional)
METHOD:

Preheat the oven to 180 Celsius degree, slice the sweet potato and bake it until it becomes soft. Meanwhile cook the quinoa for approximately 15 minutes until the water evaporates. Then place the chickpeas in the pan add smoked paprika and turmeric powder and a bit of oil and love them for a while to become a bit crunchy. Next wash the kale, I always do it with the boiling water, dry it and chop into small pieces. Once the sweet potato and quinoa are ready leave them to cool and remember not to burn chickpea 🙂 The last step is to dice the sweet potato and put into the bowl with quinoa, chickpea, kale, olive oil, fresh lime juice, pinch of salt, nigella seeds and back sesame seeds and mix it finely. If you want your salad more intense in flavour you can add paprika powder or a bit of child powder.

TO SERVE:

Your salad is ready! You can squeeze the lime on top and add some roasted sunflower seeds!
