Although it is winter season and warming meals are especially welcome, everyone sometimes wants to eat something fresh and lighter than grains or groats.
I came out with this super green salad recipe spontaneously and everything became with the cucumber I really wanted to eat one evening. I combined it with different green ingredients from my fridge and here it is. To make it more nutritious I have added avocado, chopped walnuts, and previously cooked black lentils.
This salad is really fresh and healthy as well as rich and filling.
It is a perfect idea for a dinner because it is not stodgy at all or for a lunch. It also works out perfect as a lunch box to schools or work.
INGREDIENTS:
- Cucumber
- Zucchini
- Avocado
- Rocket
- Fresh Parsley & Corriander
- Black Lentils
- Walnuts & Sunflower Seeds
- Salt & Nigella Seeds
- Olive Oil
- Lemon
METHOD:
Cook the black lentils in a boiling water for approximately 30-40 minutes. Then leave it to cool. Next dice the zucchini and stew it for a few minutes in a pan with some water. Meanwhile, chop the cucumber, avocado, rocket, parsley, and coriander. Place it in a bowl add zucchini, black lentils, sunflower seeds and chopped walnuts. Squeeze the lemon and sprinkle olive oil. Mix it and enjoy your super green salad!
