This simple oats & zucchini loaf recipe might change your life (in the kitchen).
This is a perfect alternative for those who do not eat bread for different reasons or want to try something new.
For me, it is a real godsend.
Since I have decided to stop eating bread I have been struggling what to eat with my soups, salads or delicious pastes such as hummus. And I, fortunately, came up with this zucchini loaf idea!
This was totally an experiment! I decided to grate zucchini, combine it with both blended oats and chickpea, and add some spices. Although the size and the texture differ than a standard bread, this one is much thinner and rather wet, it is not stodgy, crispy on the top and the taste is amazing!

INGREDIENTS:
- Zucchini
- Oat Flakes
- Chickpeas
- Flaxseeds
- Walnuts & Hazelnuts
- Sunflower Seeds
- Plant Oil
- Spices (smoked paprika, wild garlic, thyme)
- Salt & Nigella Seeds
METHOD:
Start with grating the zucchini and putting it in a big bowl. Then blend the oat flakes and previously cooked chickpeas and mix it together with the courgette. Add chopped nuts, previously soaked (just for a while) flaxseeds, spices, salt, nigella seeds and a bit of plant oil. Combine everything into one by using your hands and if the texture is too runny add more oat flakes, blended or not. Place everything in a loaf tin laid with a baking paper. At the end, you can top your loaf with sunflower seeds, sesame seeds or oat flakes. Finally, preheat the oven to 180 Celsius degree and bake it for approximately 45 min until becomes brown and crunchy on the top. Leave it to cool for a night or at least a couple of hours and let the loaf gain a more solid structure. Store it in the fridge and enjoy your loaf for a next few days!
TO SERVE:
Slice your loaf (it should be quite wet but solid inside) and serve it as a side with salad, soup or vegetables. You can eat it with different pastes as well.
