Beetroot & Oatmeal? Sounds weird at first right?
This unique combination mightbe quite confusing for you guys, however it totally knocked me out, it is even more than delicious! Once you try it you, you will love it!
The whole secret is based on roasted beetroots. Thanks to being baked in the oven they become sweeter and their taste changes a lot. The beetroots are even better after storing them overnight in the fridge! By blending them for a puree you can either prepare the best porridge ever or do beetroot risotto as well as hummus. There are many options, you can try all of them, however this porridge is my recently discovery and with no doubt it is a winner and my hit!
Do not be afraid some of you, it doesn’t taste as a normal beetroot, believe me. By roasting, blending and combining it with pears you will discover their unique sweetness and enjoy your breakfast oatmeal a lot!
My recipe for the best porridge ever:
INGREDIENTS:
- Beetroots
- Oat Flakes
- Cashew milk (or different plant one)
- Chia Seeds
- Pear
- Pecan Nuts
METHOD:
Preheat the oven to 200 celsius degrees, quarter the beetroots and bake them in the skin until they become softer, using a fork to check them. Leave the roasted beetroot to cool and then either blend them or store them in the fridge overnight to let them to develop the flavour, then blend them in the morning to form a puree.
Prepare your oatmeal as usual, cooking oat flakes with cashew milk or any other plant one and with chia seeds stirring with the wooden spoon.
Meanwhile roast the pecan nuts on the soft pan, you can use also different nuts such as cashews or walnuts if you don’t have pecans.
Once the oatmeal is almost cooked, add the beetroot puree, as much as you wish, and stir everything together.
TO SERVE:
Serve your beetroot porridge with a pear or optionally apple, finely sliced into sticks. Add your roasted nuts and optionally top it with granola as I did 🙂
