Best Coconut Millet Pudding

Best millet pudding ever! Maybe because it is my first one!

Millet is definitely one of my healthy addictions!

This time I decided to experiment and create something slightly different!

The idea was really spontaneous but it is said that these are the best :), hope that applies to my recipe!

And here it is, the best coconut millet pudding! Very simple and delicious!

You can prepare it either by overcooking millet groats slightly until the millet becomes soft and fluffy or just by blending cooked millet.

However, it is plant milk that plays a key role here. It make the millet groats more creamy and soft as well as flavour it.

It is even better when you pre-cook your millet. This makes it softer and fluffier.

I found pomegranate perfect due to its acidic taste and small size. Nevertheless, feel free to add different fruit if you prefer.

The delicate texture of the pudding is perfect to contrast with something crunchy, such as roasted nuts or seeds.

This is my idea for the best millet pudding:

INGREDIENTS:
  • Millet Groates (previously cooked)
  • Pomegranate
  • Almonds
  • Coconut Chips
  • Cashew Milk (or any different)
METHOD:

If you have your millet groats previously cooked then place it in the small pot and cook with the plant milk and coconut chips (or shavings). If not then cook your millet either with water or with plant milk and then prepare it as it is written above.  Thanks to both the coconut and milk you texture should become more and creamy and soft, you can also enhance it by stirring with a wooden spoon.

Meanwhile, toast the finely chopped almonds and coconut chips on a pan and remove the skin of pomegranate (the best way to do it and avoid being stained is in a bowl with cold water).

If your millet is not fluffy enough at the end of cooking, use a hand blender and just blend it till it becomes smooth.

TO SERVE:

Serving your pudding in a small glass or jar is the best, then top it with pomegranate seeds, roasted almonds and coconut chips.

Perfect to eat as a breakfast or serve as a dessert!

*If you want to make it sweater, feel free to add maple syrup or honey, if you are not vegan 🙂
