Are you bored with the classic hummous? Lets try my delicious autumn paste!
For all pumpkin lovers as well as those who are not pumpkin fans, believe me you will become after trying out this recipe!
This autumn paste will knock everyone out!
I came out with this recipe accidentally, roasting butternut squash and having chickpea leftovers. I added a bigger amount of turmeric powder, that is my must have, especially during the autumn and winter time because it is a natural antibiotic.
If you do not have a butternut squash do not give up, try to make it with different kind of pumpkin, maybe you discover the new delicious taste!
This combination appeared to be one of the best pastes I have ever tried!
INGREDIENTS:
- Butternut Squash
- Chickpeas (soaked overnight and then cooked in a water with a pinch of salt for an hour to become soft)
- Turmeric Powder
- Olive Oil
- Plant Oil (for baking)
- Lemon
- Spices (Salt, Nigela Seeds, Cayene Peper)
- Black Sesame Seeds
YOU ALSO NEED:
- Hand Blender
- Big bowl
METHOD:
Pre-heat the oven to 200 degree celsius. Halve the butternut squash and core it. Sprinkle it with oil and put it (skin up, upside down) on the baking paper on a baking tray. Bake it about 35-45 min, so as the butternut squash becomes soft (check it with the fork), it should have a nice colour and smell 🙂 Leave it to cool and meanwhile gather the rest of the ingredients. Blend the butternut squash with the handful of chickpea, turmeric powder, olive oil and the rest of the spices. Squeeze the lemon to break up the pumpkin taste a bit. Try it and add more spices if you want! Your turmeric paste is ready to eat!
*If you would like your paste to be more like hummous add more chickpeas 🙂 You can also add whatever spices you wish. If you do not like the turmeric taste you can add sweet paprika or more chilli instead, however try it, this intensively turmeric flavour mixed with the butternut squash shocked even me- positively 🙂
TO SERVE:
This paste is so delicious that I literally eat it by its own 🙂 I also add it to buddha bowl or eat with my veggie burgers. You can eat it as well with roasted vegetables or as a paste for your sandwiches! Remember to top it with roasted sesame seeds as the last part while preparing your meal. There is nothing better!
